Blueberry Peach Feta Salad (Print Version)

# Ingredients:

01 - 1 pint fresh blueberries
02 - 2 peaches, diced
03 - 2 Persian cucumbers, sliced
04 - ½ cup crumbled feta cheese

→ Dressing

05 - 3 tablespoons fresh lemon juice
06 - 1 tablespoon Dijon mustard
07 - 1 tablespoon honey
08 - 1 tablespoon olive oil
09 - 1 tablespoon finely chopped basil
10 - Kosher salt and fresh ground black pepper to taste

# Instructions:

01 - In a large bowl, combine the chopped basil, fresh blueberries, diced peaches, and sliced Persian cucumbers.
02 - In a small bowl, whisk together the Dijon mustard, honey, fresh lemon juice, salt, and pepper. Gradually whisk in the olive oil until the dressing is fully emulsified.
03 - Pour the lemon basil vinaigrette over the salad ingredients in the large bowl and toss gently to coat evenly.
04 - Sprinkle the crumbled feta cheese over the salad.
05 - Toss the salad lightly one more time to distribute the feta cheese evenly. Serve immediately.
