Brown Sugar Banana Pancakes (Print Version)

# Ingredients:

01 - 1 ½ cups all-purpose flour
02 - 2 teaspoons baking powder
03 - ¼ teaspoon salt
04 - ¾ cup mashed ripe banana (about 2 small bananas)
05 - 2 tablespoons melted unsalted butter (plus more for greasing)
06 - 1 large egg
07 - ¾ cup buttermilk
08 - ¼ cup packed dark brown sugar
09 - 1 teaspoon pure vanilla extract

10 - Butter
11 - Maple syrup
12 - Sliced banana
13 - Walnuts
14 - Chocolate chips

# Instructions:

01 - In a large bowl, combine flour, baking powder, and salt.
02 - In a separate bowl, whisk together mashed banana, melted butter, egg, buttermilk, brown sugar, and vanilla.
03 - Add the wet ingredients to the dry ingredients and stir with a rubber spatula until combined, being careful not to overmix.
04 - Heat a griddle or large skillet over medium-low heat and grease with butter. Drop the batter in approximately ⅓ cup portions onto the griddle, spreading out the batter to form even circles. Cook until bubbles begin to form on the surface, then flip and continue cooking until cooked through, about 1-2 minutes per side. Avoid high heat to ensure even cooking.
05 - Serve pancakes hot with butter, maple syrup, sliced banana, walnuts, and/or chocolate chips.
