Preheat the oven to 350°F. Line a baking sheet with parchment paper.

Combine the butter, brown sugar, and granulated sugar in the bowl of a stand mixer and beat until light and creamy.

Add the egg and pure vanilla extract to the mixture. Mix until smooth.

Add the flour about ½ cup at a time, mixing on low speed until all the flour is incorporated. Add the baking soda, kosher salt, and quick oats, then mix on medium-low speed until combined.

Stir in the mini chocolate chips and 1 cup of the crushed Cadbury mini eggs using a wooden spoon or spatula. Do not overmix.

Scoop the dough onto the prepared baking sheet using a 3-tablespoon cookie scoop. Place each ball of dough about 3 inches apart.

Bake the cookies for 8-9 minutes or until the edges are golden.

While the cookies are still warm, press the remaining crushed Cadbury mini eggs onto the tops of the cookies.
