Cadbury Egg Chocolate Cookies (Print Version)

# Ingredients:

01 - ½ cup unsalted butter, softened
02 - ½ cup brown sugar
03 - ½ cup granulated sugar
04 - 1 egg
05 - 1 tsp pure vanilla extract
06 - 1 ¼ cup all-purpose flour
07 - 1 tsp baking soda
08 - 1 tsp kosher salt
09 - ½ cup quick oats
10 - 1 cup mini chocolate chips
11 - 1 ¼ cup crushed Cadbury mini eggs, divided

# Instructions:

01 - Preheat the oven to 350°F. Line a baking sheet with parchment paper.
02 - Combine the butter, brown sugar, and granulated sugar in the bowl of a stand mixer and beat until light and creamy.
03 - Add the egg and pure vanilla extract to the mixture. Mix until smooth.
04 - Add the flour about ½ cup at a time, mixing on low speed until all the flour is incorporated. Add the baking soda, kosher salt, and quick oats, then mix on medium-low speed until combined.
05 - Stir in the mini chocolate chips and 1 cup of the crushed Cadbury mini eggs using a wooden spoon or spatula. Do not overmix.
06 - Scoop the dough onto the prepared baking sheet using a 3-tablespoon cookie scoop. Place each ball of dough about 3 inches apart.
07 - Bake the cookies for 8-9 minutes or until the edges are golden.
08 - While the cookies are still warm, press the remaining crushed Cadbury mini eggs onto the tops of the cookies.
09 - Let the cookies cool on the baking sheet for about 10 minutes before serving.
