Caesar Salad Homemade Dressing (Print Version)

# Ingredients:

→ Salad

01 - 4 cups hearty day-old bread, torn into 3/4-inch pieces
02 - 2 Tbsp olive oil
03 - 2 large Romaine hearts (or 1 head Romaine lettuce), chopped
04 - 1/4 cup finely shredded parmesan

→ Dressing

05 - 3/4 cup mayonnaise
06 - 1 1/2 Tbsp fresh lemon juice
07 - 1 tsp dijon mustard
08 - 1 tsp Worcestershire sauce
09 - 4 anchovies packed in oil, drained, minced then mashed
10 - 1/4 cup finely grated parmesan
11 - 2 garlic cloves, minced (2 tsp)
12 - Salt and freshly ground black pepper

# Instructions:

01 - Preheat oven to 375°F (190°C). Arrange bread pieces close together on an 18x13-inch rimmed baking sheet, drizzle evenly with olive oil, then toss to coat.
02 - Spread bread pieces across the baking sheet and bake in the preheated oven until golden brown and crisp, about 15-20 minutes, tossing once halfway through.
03 - In a mixing bowl, whisk together mayonnaise, lemon juice, dijon mustard, Worcestershire sauce, anchovies, garlic, 1/4 cup parmesan, and season with salt and pepper to taste. Use a pinch of salt and approximately 1/2 tsp of pepper.
04 - Place chopped Romaine lettuce in a large bowl, add the prepared dressing, and toss to evenly coat. Add the croutons and the remaining parmesan, then toss gently to combine.
05 - Serve the Caesar Salad immediately.

01 - Use hearty bread for the croutons to ensure they retain their crispness after being tossed in the dressing.
