Caprese Pasta Tomato Mozzarella (Print Version)

# Ingredients:

→ Vinaigrette Dressing

01 - 1/4 cup olive oil
02 - 1/4 cup balsamic vinegar
03 - 2 to 3 tablespoons fresh lemon juice
04 - 1 clove minced garlic
05 - 1 teaspoon Italian seasoning
06 - 1/4 teaspoon kosher salt
07 - 1/4 teaspoon black pepper

→ Caprese Pasta Salad

08 - 1/2 pound dried pasta (farfalle or other small pasta)
09 - 8 ounces mozzarella pearls or cubed fresh mozzarella
10 - 2 cups grape tomatoes, sliced in half
11 - 1/4 cup fresh basil leaves, thinly sliced
12 - Salt and pepper to taste

# Instructions:

01 - In a small bowl or a jar with a lid, combine olive oil, balsamic vinegar, lemon juice, minced garlic, Italian seasoning, salt, and pepper. Whisk or shake until fully emulsified. Set aside.
02 - Cook the pasta according to package directions. Once cooked, drain and rinse with cold water to stop the cooking process.
03 - In a large bowl, combine the cooked and cooled pasta, grape tomatoes, mozzarella pearls, and sliced basil leaves. Drizzle with the prepared vinaigrette dressing and toss to combine. Taste and adjust seasoning as necessary.
04 - Serve the pasta salad immediately. Optionally, garnish with additional fresh basil for presentation.
