Chilis Southwest Eggrolls (Print Version)

# Ingredients:

→ Egg Rolls

01 - 8 oz chicken breast, cooked and shredded
02 - 2 tablespoons olive oil
03 - 1/2 cup black beans, canned, rinsed, and drained
04 - 1/2 cup corn, thawed frozen, canned, or fresh
05 - 1/4 cup red bell pepper, diced
06 - 1/4 cup green onions, diced
07 - 1 jalapeno pepper, diced
08 - 2 tablespoons fresh cilantro, chopped
09 - 1/3 cup frozen spinach, thawed and chopped
10 - 3/4 teaspoon ground cumin
11 - 3/4 teaspoon chili powder
12 - 1/2 teaspoon salt, adjusted to taste
13 - 1/4 teaspoon cayenne pepper
14 - 1 cup Monterey Jack cheese, shredded
15 - 10-12 egg roll wrappers
16 - Oil for frying

→ Avocado Ranch Dipping Sauce

17 - 1/2 cup ranch dressing
18 - 1 medium ripe avocado, mashed
19 - 2 tablespoons buttermilk
20 - 2 tablespoons fresh cilantro, chopped
21 - 1 1/2 teaspoons lime juice
22 - 1/4 teaspoon salt
23 - 1/4 teaspoon garlic powder
24 - 1/4 teaspoon onion powder

# Instructions:

01 - In a large skillet, heat the olive oil and sauté the red bell peppers until tender. Add green onions, jalapeno, corn, black beans, spinach, ground cumin, chili powder, salt, and cayenne pepper. Stir and cook for 3-4 minutes until vegetables soften slightly.
02 - Transfer the cooked vegetables to a large bowl. Add the shredded chicken and cilantro, then mix well. Incorporate the shredded cheese and stir until evenly combined.
03 - Place an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 1/4 cup of the filling onto the center of the wrapper. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Dab water to seal the top corner. Repeat for remaining wrappers and filling.
04 - Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the egg rolls in batches for 3-4 minutes until golden brown and crispy. Drain on paper towels.
05 - In a blender, combine ranch dressing, avocado, buttermilk, cilantro, lime juice, salt, garlic powder, and onion powder. Blend until smooth.
06 - Serve the egg rolls hot with prepared avocado ranch dipping sauce on the side.
