Using a stand mixer or hand mixer, beat the cream cheese until fluffy (approximately 30 seconds). Add the sugar, vanilla extract, and egg, and mix until well combined.

Open the cans of crescent roll dough. Using a rolling pin, flatten both sheets of dough into uniform layers.

Sprinkle ¼ cup of the prepared cinnamon sugar into the greased baking dish. Lay the first sheet of dough over the cinnamon sugar. Spread the cheesecake filling evenly over the dough, then top with the remaining sheet of dough. Sprinkle the remaining cinnamon sugar over the top layer.
