Preheat oven to 350°F and line a baking sheet with parchment paper or a Silpat.

In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.

In a stand mixer with paddle attachment or in a bowl with a hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Mix in egg and vanilla until just combined.

With the mixer on low, blend in the flour mixture until just combined, taking care not to over-mix.

Fold in the crushed Cinnamon Toast Crunch cereal.

Scoop approximately 3 tablespoons of cookie dough onto prepared baking sheets, spacing them about an inch apart.

Bake for 10-12 minutes, until edges are just turning golden. Let cool on the pan for a couple of minutes before transferring to a wire rack to cool completely.

When cookies have cooled completely, drizzle them with icing.
