Cinnamon Toast Crunch Cookies (Print Version)

# Ingredients:

→ Cookies

01 - 2 cups all-purpose flour
02 - 1 teaspoon baking soda
03 - 1 ½ teaspoons ground cinnamon
04 - ½ teaspoon salt
05 - 1 cup unsalted butter, room temperature
06 - ½ cup granulated sugar
07 - ¾ cup packed light brown sugar
08 - 1 large egg
09 - 2 teaspoons vanilla
10 - 1 ½ cups crushed Cinnamon Toast Crunch cereal

→ Icing

11 - ½ cup confectioners' sugar
12 - 1 tablespoon milk
13 - Pinch ground cinnamon
14 - Pinch salt

# Instructions:

01 - Preheat oven to 350°F and line a baking sheet with parchment paper or a Silpat.
02 - In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
03 - In a stand mixer with paddle attachment or in a bowl with a hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
04 - Mix in egg and vanilla until just combined.
05 - With the mixer on low, blend in the flour mixture until just combined, taking care not to over-mix.
06 - Fold in the crushed Cinnamon Toast Crunch cereal.
07 - Scoop approximately 3 tablespoons of cookie dough onto prepared baking sheets, spacing them about an inch apart.
08 - Bake for 10-12 minutes, until edges are just turning golden. Let cool on the pan for a couple of minutes before transferring to a wire rack to cool completely.
09 - When cookies have cooled completely, drizzle them with icing.
10 - In a small bowl, whisk together confectioners' sugar, milk, cinnamon, and salt until well combined.
