Coconut Lime Dessert Bars (Print Version)

# Ingredients:

→ Crust

01 - ½ cup graham crackers, crushed
02 - 1 cup all-purpose flour
03 - ⅓ cup white sugar
04 - ½ cup butter, melted

→ Filling

05 - 2 cups sweetened condensed milk
06 - 1 cup full fat coconut milk
07 - ½ cup sour cream
08 - ¾ cup lime juice, freshly squeezed preferred
09 - 2 tablespoon lime zest
10 - 1 tablespoon coconut extract, optional
11 - 2-3 drops green food coloring, optional

→ Topping

12 - 1 cup sweetened shredded coconut

# Instructions:

01 - Preheat the oven to 350℉ and line the baking dish with parchment paper.
02 - In a large mixing bowl, combine the crushed graham crackers, white sugar, all-purpose flour, and melted butter. Mix well and press into the bottom of the parchment-lined pan. Bake in the preheated oven for 15 minutes.
03 - While the crust bakes, combine the sweetened condensed milk, full fat coconut milk, sour cream, lime juice, and lime zest in a large mixing bowl. If using, also add the coconut extract and green food coloring. Mix until smooth.
04 - Pour the prepared filling on top of the baked crust. Continue baking for 15 more minutes, then remove from the oven.
05 - While still warm, sprinkle the shredded coconut evenly over the top. Chill in the fridge for at least 2 hours to set the filling.
06 - Remove the bars from the pan by lifting out the parchment paper. Slice and serve.

01 - Chilling the bars ensures the filling is properly set and easier to cut.
