Using your hands or a fork, coat each pineapple chunk in the coconut mixture, ensuring they are fully covered. You can also simply roll the pineapple chunks in the shredded coconut if you prefer a more straightforward method.

Place the coated pineapple bites on a serving platter and refrigerate for at least 30 minutes to allow the flavors to meld and the bites to firm up. Garnish with fresh mint leaves if desired before serving.
