Cucumber Heirloom Tomato Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 3-4 ripe heirloom tomatoes
02 - 3-4 Kirby cucumbers or 1 thin English cucumber
03 - 1/3 red onion, thinly sliced
04 - 1 tbsp fresh dill or preferred herb

→ Salad Dressing

05 - 2 tbsp red wine vinegar
06 - 3 tbsp extra virgin olive oil
07 - 1/2 tsp Dijon mustard or multigrain mustard
08 - Salt to taste

# Instructions:

01 - In a small mason jar, combine red wine vinegar, olive oil, Dijon mustard, and salt. Seal the jar and shake vigorously until the vinaigrette emulsifies.
02 - Using a mandolin or sharp knife, thinly slice the cucumbers, tomatoes, and red onions.
03 - Combine the sliced vegetables in a large salad bowl. Add fresh dill or chosen herbs.
04 - Start by adding 2 tablespoons of the prepared vinaigrette to the salad. Toss gently to coat the ingredients evenly, ensuring the thin slices remain intact. Add more dressing if desired. Serve immediately.
