Easy Broccoli Cheese Cups (Print Version)

# Ingredients:

01 - 3 cups cooked and chopped broccoli
02 - 1 large egg
03 - 12 Ritz crackers, crushed
04 - 1 heaping cup of cheddar cheese
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon salt

# Instructions:

01 - Preheat oven to 375°F (190°C).
02 - In a medium-sized bowl, mix all of the ingredients together until well incorporated.
03 - Generously grease a mini muffin tin and evenly distribute the mixture into about 16 muffin tin cups.
04 - Use your fingers to press the mixture down so that it is well compacted.
05 - Top with more cheese and bake on the center rack for 14–16 minutes, or until the cheese begins to brown.
06 - Let them cool for at least 5 minutes before removing from the pan.
07 - Serve alone or with a little ranch or ketchup for dipping.
08 - Store any leftovers in the refrigerator for up to 3 days.

01 - Ensure the broccoli is well drained to avoid excess moisture.
02 - For a crispier finish, bake slightly longer until golden brown.
