Easy Salmon Kebabs Instructions (Print Version)

# Ingredients:

01 - 3 tablespoons olive oil
02 - 1 ½ tablespoons fresh Italian flat-leaf parsley, finely chopped
03 - 2 garlic cloves, finely minced
04 - ½ teaspoon kosher salt
05 - ¼ teaspoon freshly ground black pepper
06 - 1 ½ pounds wild salmon fillet (skinless), cut into 1-inch cubes
07 - 2 bell peppers, cut into pieces roughly the size of salmon cubes
08 - 1 large lemon, sliced into very thin rounds
09 - 1 large lemon, cut into wedges for serving

10 - 8 metal skewers (or wooden skewers, soaked in water for at least 1 hour before grilling)

# Instructions:

01 - Heat your grill over medium heat.
02 - In a small bowl, add olive oil, parsley, and minced garlic. Whisk together until well blended. Set aside.
03 - Using 2 skewers for each kebab, thread alternating pieces of salmon, bell pepper, and folded lemon slices. Repeat until all ingredients are used to create 4 kebabs.
04 - Brush or spoon the oil and seasoning mixture evenly over all sides of the kebabs. Sprinkle kosher salt and black pepper evenly on both sides.
05 - Place the kebabs on the grill. Cook, turning 1-2 times, until the salmon is opaque, approximately 6-8 minutes.
06 - Squeeze fresh lemon juice over each kebab before serving. Serve immediately with lemon wedges.
