Fresh Healthy Cilantro Lime Pasta (Print Version)

# Ingredients:

→ Cilantro Lime Dressing

01 - 1 batch Greek Yogurt Avocado Salad Dressing, double the cilantro and omit the parsley

→ Pasta Salad

02 - 1 375g box short pasta, such as rotini, fusilli, or penne, cooked according to package directions
03 - 1 19 oz. can chickpeas, drained and rinsed
04 - 1 12 oz. can corn, drained and rinsed
05 - 1 medium cucumber, chopped
06 - 1 small red onion, diced
07 - 1/2 cup feta cheese or cotija cheese, crumbled
08 - Fresh cilantro, optional, for garnish
09 - Fresh lime juice, optional, for serving

# Instructions:

01 - Blend the ingredients for the cilantro lime dressing in a blender or food processor until smooth. Set aside.
02 - In a large bowl, mix the cooked pasta, chickpeas, corn, cucumber, and red onion until well combined.
03 - Drizzle the cilantro lime dressing over the salad and toss until all components are evenly coated.
04 - Sprinkle the crumbled feta cheese on top of the salad and gently toss to mix.
05 - Garnish with fresh cilantro leaves and an optional squeeze of lime juice before serving. Enjoy!

01 - Double the amount of cilantro in the dressing for extra flavor.
