In a large bowl, toss the halved potatoes with olive oil, garlic, Parmesan cheese, salt, and black pepper until evenly coated.

Place the seasoned chicken on one side of the prepared baking sheet. Spread the potatoes on the other side, ensuring they are in a single layer for even cooking.

Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway. Use a meat thermometer to ensure the chicken reaches an internal temperature of 74°C (165°F).

In the last 5 minutes of cooking, sprinkle extra Parmesan over the chicken and potatoes, then broil for a golden crust.
