Greek Roasted Potatoes & Feta (Print Version)

# Ingredients:

01 - 1 kg potatoes, peeled and cut into small cubes
02 - 1 red capsicum bell pepper, cut into cubes
03 - 3 tablespoons olive oil
04 - 1 teaspoon salt
05 - Juice of 1/4 lemon

→ Spice mix

06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon paprika
09 - 1 teaspoon oregano
10 - 1/4 teaspoon cinnamon
11 - 1/2 teaspoon ground pepper

→ To finish

12 - 60 grams feta cheese, smooth or Greek
13 - 2 tablespoons chopped parsley
14 - Juice of 1/4 lemon

# Instructions:

01 - Preheat the oven to 200°C (400°F).
02 - Toss cubed potatoes and red peppers in a large bowl with salt, 2 tablespoons olive oil, and the juice of 1/4 lemon.
03 - Grease a large, flat baking tray with 1 tablespoon of olive oil. Spread the potatoes and peppers evenly and roast in the middle shelf of the oven for 25 minutes.
04 - Remove the potatoes from the oven after 25 minutes and sprinkle evenly with the spice mix. Use a spatula to stir the potatoes to ensure even coating.
05 - Place the baking tray back in the oven and roast for another 10-15 minutes until the potatoes have a golden crispy edge and are soft in the middle.
06 - Finish the potatoes with a drizzle of lemon juice, crumbled feta, and chopped parsley before serving.
