Ground Chicken with Mozzarella (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1/2 cup diced onion
03 - 1 tablespoon chopped garlic
04 - 2 pounds ground chicken
05 - 1 teaspoon kosher salt
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon dried basil
08 - 1/2 teaspoon dried parsley
09 - 8 ounces tomato sauce or marinara sauce
10 - 1 tablespoon balsamic vinegar
11 - 8 ounces mozzarella pearls
12 - 10 ounces cherry tomatoes, halved
13 - Fresh chopped basil for garnish
14 - Balsamic glaze for garnish
15 - Grated parmesan cheese for garnish

# Instructions:

01 - Preheat the oven to 500°F.
02 - Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 5 minutes until softened. Add the chopped garlic, stir, and cook for 1 minute.
03 - Add the ground chicken to the skillet, breaking it up as it cooks. Cook until fully done, then drain any excess drippings if necessary.
04 - Season the chicken with kosher salt, dried oregano, dried basil, and dried parsley. Pour in the tomato sauce and balsamic vinegar, stirring to combine.
05 - Scatter mozzarella pearls and halved cherry tomatoes over the top of the cooked chicken mixture in the skillet.
06 - Transfer the skillet to the preheated oven and bake for 7-8 minutes until the mozzarella is melted and the tomatoes are slightly blistered.
07 - Garnish with fresh chopped basil, grated parmesan cheese, and a drizzle of balsamic glaze before serving.
