Heirloom Tomato Salad Basil (Print Version)

# Ingredients:

01 - 2 lbs heirloom or ripe slicing tomatoes
02 - 1/2 cup red onion, small diced
03 - 1/2 bunch fresh basil leaves
04 - 1/4 tsp salt

→ Herb Capers Vinaigrette Dressing

05 - 1/2 tsp black pepper
06 - 1 tsp dried oregano or 1 tbsp fresh oregano leaves, chopped
07 - 2 tbsp capers, drained and rough chopped
08 - 1/4 cup olive oil
09 - 1/4 tsp salt (adjust to taste)
10 - 1/4 cup vinegar
11 - 1 tsp dijon or yellow mustard

# Instructions:

01 - Slice heirloom tomatoes into even round slices using a serrated knife. Wash and dry basil leaves. Chop some of the basil leaves to yield 1 tablespoon. Small dice red onions and set them aside.
02 - Add olive oil, vinegar, mustard, salt, and black pepper to a small bowl or jar. Whisk or shake to emulsify. Mix in chopped capers, chopped basil, and half of the diced red onions. Set dressing aside.
03 - Arrange sliced tomatoes on a wide salad platter. Top with the remaining half of the diced red onions. Sprinkle salt on the tomatoes and distribute the herb dressing, capers, and onions evenly.
04 - Garnish the salad with the remaining basil leaves and serve immediately.
