# Ingredients:

01 - 1 pound chicken thighs or breasts
02 - 2 chipotle peppers in adobo sauce
03 - 3 tablespoons honey
04 - 2 cups cooked white or brown rice
05 - 1 avocado, sliced
06 - 1 cup cherry tomatoes, halved
07 - 1 cup corn kernels
08 - Fresh cilantro, for garnish

# Instructions:

01 - Blend chipotle peppers, adobo sauce, honey, garlic, and a splash of lime juice until smooth. Ensure the sauce is well-balanced in terms of sweetness and heat for proper marinating and glazing.
02 - Marinate the chicken in half the chipotle sauce for at least 20 minutes. Sear the marinated chicken in a hot skillet until golden brown on both sides. Lower the heat and cook thoroughly, brushing additional sauce onto the chicken during cooking to enhance flavor and glaze.
03 - Layer a serving of cooked rice in a bowl. Arrange sliced chicken, cherry tomatoes, corn, avocado slices, and any desired toppings such as shredded cheese or sour cream on top.
