Preheat your oven to 350°F (175°C). Place 1 stick of butter in a 9×9-inch baking dish and place the dish in the oven to allow the butter to melt, about 3-4 minutes.

In a large bowl, whisk together flour, baking powder, salt, and sugar. Add buttermilk, vanilla extract, and lemon extract (if using). Stir until the batter is smooth and well combined; it should be thick but pourable.

Carefully pour the batter evenly over the melted butter in the dish. Do not stir—allow the butter to sit on top of the batter.

Spoon lemon pie filling or curd evenly over the batter. The filling will sit atop the batter at first but will sink into it as it bakes.

Bake the cobbler in the preheated oven for 45-55 minutes, until the edges are golden-brown and the center is set but slightly soft. A toothpick inserted in the center should come out clean or with just a few crumbs attached.

Remove the cobbler from the oven and let it cool for 10-15 minutes. This will allow the filling to firm up slightly for easier serving.
