Magic Lemon Cobbler Dessert (Print Version)

# Ingredients:

→ Cobbler Batter

01 - 1/2 cup (1 stick) unsalted butter
02 - 1 cup all-purpose flour
03 - 1 1/2 teaspoons baking powder
04 - 1/4 teaspoon salt
05 - 1 cup granulated sugar
06 - 1 cup buttermilk (or substitute by adding 1 tablespoon lemon juice or vinegar to regular milk)
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon lemon extract (optional)

09 - 21 oz canned lemon pie filling or homemade equivalent

# Instructions:

01 - Preheat your oven to 350°F (175°C). Place 1 stick of butter in a 9×9-inch baking dish and place the dish in the oven to allow the butter to melt, about 3-4 minutes.
02 - In a large bowl, whisk together flour, baking powder, salt, and sugar. Add buttermilk, vanilla extract, and lemon extract (if using). Stir until the batter is smooth and well combined; it should be thick but pourable.
03 - Carefully pour the batter evenly over the melted butter in the dish. Do not stir—allow the butter to sit on top of the batter.
04 - Spoon lemon pie filling or curd evenly over the batter. The filling will sit atop the batter at first but will sink into it as it bakes.
05 - Bake the cobbler in the preheated oven for 45-55 minutes, until the edges are golden-brown and the center is set but slightly soft. A toothpick inserted in the center should come out clean or with just a few crumbs attached.
06 - Remove the cobbler from the oven and let it cool for 10-15 minutes. This will allow the filling to firm up slightly for easier serving.
07 - Cut the cobbler into squares and serve warm. Optional toppings include whipped cream, ice cream, powdered sugar, or fresh lemon slices.
