Add diced apples, 1 teaspoon coconut sugar, salt, and cinnamon to a medium pot. Cover and cook on medium heat until the apples begin to boil. Reduce heat to a simmer and cook until tender, approximately 30 minutes. Avoid overcooking to prevent turning them into applesauce. Allow the mixture to cool to room temperature before assembly.

In a medium mixing bowl, combine softened cream cheese, yogurt, and the remaining coconut sugar. Beat with an electric mixer until smooth and the sugar is dissolved, approximately 2 minutes. Refrigerate until assembly.

Place dates in a food processor and pulse until finely diced. Add walnuts and pulse just until a coarse crumb mixture forms and the dates and walnuts are combined.

Evenly layer walnut mixture, cream cheese filling, and cooled cooked apples into dessert dishes. Sprinkle any remaining walnut mixture over the top.
