Ranch Garlic Parmesan Skewers (Print Version)

# Ingredients:

→ Marinade

01 - ½ cup ranch dressing
02 - ¼ cup grated parmesan cheese
03 - 2 tablespoons olive oil
04 - 3 cloves garlic, minced
05 - 1 teaspoon dried parsley or fresh parsley, chopped
06 - ½ teaspoon black pepper
07 - ½ teaspoon garlic powder
08 - 1 teaspoon lemon juice (optional)

→ Skewers

09 - 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
10 - Wooden or metal skewers

# Instructions:

01 - In a bowl, mix together the ranch dressing, parmesan cheese, olive oil, garlic, parsley, black pepper, garlic powder, and lemon juice (if using). Stir until everything is well combined.
02 - Place the cubed chicken into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring that all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
03 - Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking. If using wooden skewers, soak them in water for 15 minutes before threading the chicken to prevent them from burning on the grill.
04 - Preheat your grill to medium-high heat.
05 - Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is fully cooked through and has reached an internal temperature of 165°F (75°C). The chicken should have a nice char on the outside.
06 - Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with additional chopped parsley or extra parmesan cheese, if desired. Serve the skewers with your favorite side dishes or a dipping sauce like ranch dressing, BBQ sauce, or a tangy yogurt dip.
