Preheat the oven to 350ºF. Grease a 9x13 inch baking pan.

In a bowl, mix together the grated zucchini, brown sugar, applesauce, eggs, and vanilla extract.

In a separate bowl, stir together the oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.

Gradually add the dry mixture to the wet ingredients and stir until just combined.

Gently fold in the chocolate chips and/or nuts, if using.

Pour the batter into the prepared pan and bake for approximately 55 minutes, or until a toothpick inserted in the center comes out clean.

If desired, melt together the chocolate chips, butterscotch chips, and peanut butter for frosting, or spread Nutella on top of the cooled brownies.
