Skillet Mexican Street Corn (Print Version)

# Ingredients:

01 - 2 tablespoons butter
02 - 4 cups frozen corn
03 - 1/4 cup mayonnaise
04 - 1/4 cup sour cream
05 - Juice of 1 lime
06 - 1 teaspoon ground cumin
07 - 1/2 teaspoon chili powder
08 - 1/2 cup cotija cheese
09 - 1/4 cup cilantro or green onions

# Instructions:

01 - Melt butter in a skillet over medium-high heat. Stir in frozen corn and cook just until corn is heated through, stirring often.
02 - Stir in mayonnaise, sour cream, lime juice, ground cumin, and chili powder into the skillet.
03 - Add half of the cotija cheese to the skillet, stirring until melted.
04 - Sprinkle the top with the remaining cotija cheese and garnish with a dash of chili powder and cilantro or green onions.
