In a bowl, whisk together beef consomme, soy sauce, dark brown sugar, sesame oil, and minced garlic.

Place beef strips into the slow cooker and pour the sauce mixture over them, tossing to evenly coat.

Turn the slow cooker to low and cook for about 6 hours, or until the beef is tender but not shredding.

One hour before the cooking time ends, whisk 0.25 cup of the sauce from the slow cooker with cornstarch in a separate bowl. Slowly stir this mixture back into the slow cooker.
