Drop the yogurt mixture into small bites or clusters onto the lined baking sheet, spacing them out evenly. This should yield about 8, 2-inch size yogurt bites.

Transfer the baking sheet to the freezer and freeze the yogurt bites until frozen solid, about 30 minutes.

Place the chocolate chips into a microwave-safe bowl and add the coconut oil, if using. Microwave in 30-second intervals, stirring in between until fully melted. Let the melted chocolate cool at room temperature for 3-5 minutes.

Remove the frozen yogurt bites from the freezer. Using a fork, dip each one completely into the melted chocolate and place it back onto the baking sheet. Sprinkle with sea salt if desired.
