Creamy Cajun Salmon Pasta (Print Version)

# Ingredients:

01 - 4 ounces uncooked pasta
02 - 1/2 pound fresh salmon
03 - Flour for dredging

→ Sauce and Seasoning

04 - 1/2 tablespoon olive oil
05 - 1 tablespoon butter
06 - 1 teaspoon Dijon mustard
07 - 2 tablespoons sun-dried tomatoes, drained
08 - 3 cloves garlic, minced
09 - 3/4 cup heavy cream
10 - 1 teaspoon fresh lemon juice
11 - 1/2 tablespoon Cajun seasoning
12 - Salt to taste
13 - Pepper to taste

→ Optional Toppings

14 - Fresh basil, torn
15 - Freshly grated parmesan cheese

# Instructions:

01 - Boil a large pot of salted water for the pasta. Cook until al dente as per package instructions.
02 - Season the salmon lightly with salt and pepper, then coat it in flour.
03 - Add olive oil and butter to a skillet over medium-high heat. Cook the salmon for 2 minutes on each side, then set aside.
04 - Reduce the heat to medium. Add sun-dried tomatoes, garlic, and Dijon mustard to the skillet. Stir constantly and cook for 30 seconds.
05 - Add cream, lemon juice, and Cajun seasoning to the skillet. Stir until the sauce is smooth.
06 - Return the salmon to the skillet. Break it into pieces using a spoon and cook for a few minutes until done. Add fresh basil during the last 2 minutes if using.
07 - Drain the pasta and toss it with the sauce. Serve with freshly grated parmesan if desired.

# Notes:

01 - Sun-dried tomatoes should be drained if packed in oil.
02 - This recipe can serve 4 if you double the pasta and add a side dish.
