Easy Air Fryer Cheddar Biscuits (Print Version)

# Ingredients:

01 - 1 large egg, room temperature
02 - 1/4 cup cottage cheese (4% milk fat recommended)
03 - 1/2 cup shredded cheddar cheese
04 - 1/4 cup coconut flour
05 - 1/2 tablespoon baking powder
06 - 1/8 teaspoon salt
07 - 3 teaspoons butter, divided (or avocado/olive oil spray)

# Instructions:

01 - Set the air fryer to 350°F. Add 1 teaspoon butter to each 4-ounce ramekin and preheat for 3 minutes.
02 - In a food processor, blend the egg and cottage cheese. Add shredded cheddar cheese, coconut flour, baking powder, and salt, then process the mixture into a wet dough.
03 - Using a 1/3 cup measuring cup, scoop three mounds of dough. For a flatter biscuit, gently press them down slightly.
04 - Place the dough mounds into the preheated ramekins and air fry for 10 minutes until golden brown.
05 - Let the biscuits cool for 5-10 minutes. Optionally, add a pat of butter on top and return to the air fryer for 1-2 minutes to melt.
