Set the air fryer to 350°F. Add 1 teaspoon butter to each 4-ounce ramekin and preheat for 3 minutes.

In a food processor, blend the egg and cottage cheese. Add shredded cheddar cheese, coconut flour, baking powder, and salt, then process the mixture into a wet dough.

Using a 1/3 cup measuring cup, scoop three mounds of dough. For a flatter biscuit, gently press them down slightly.

Place the dough mounds into the preheated ramekins and air fry for 10 minutes until golden brown.

Let the biscuits cool for 5-10 minutes. Optionally, add a pat of butter on top and return to the air fryer for 1-2 minutes to melt.
