Shape the ground sausage into 4 equal patties. Heat a large skillet over medium-high heat and cook patties for approximately 3 minutes per side, or until fully cooked. Remove from heat and set aside. If using turkey bacon, cook now in the same skillet.

In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper. Heat a large skillet over medium-low heat and melt 1 tablespoon of butter to coat the pan.

Pour ¼ of the egg mixture into the skillet and let it cook flat without stirring, as an omelet. Season lightly with salt and pepper. Cook for 1–2 minutes, then flip and cook for an additional minute until fully set. Fold the edges into thirds, then fold the top and bottom inwards to create a square stack. Remove and set aside. Repeat this process with the remaining egg mixture to make 4 squares in total.

In a large bowl, mix all pancake ingredients together until smooth and fully combined.

Heat a skillet over medium heat and coat with a small amount of butter. Pour 3 tablespoons of batter per pancake, cooking 2–3 pancakes at a time without overcrowding. Cook for about 2 minutes, then flip and cook for another minute, being careful not to burn. Repeat until you have 8 pancakes to use as tops and bottoms for the sandwiches.

To assemble, place one pancake on a plate. Layer with a slice of cheese, one sausage patty, an omelet square, and turkey bacon. Top with another pancake. Repeat for the remaining ingredients to create 4 McGriddles.
