Homemade Greek Fries (Print Version)

# Ingredients:

01 - 4 large Yukon Gold potatoes
02 - 3 tablespoons olive oil
03 - 1 teaspoon salt
04 - 1/2 teaspoon dried oregano
05 - 1/2 teaspoon dried dill
06 - 1/2 teaspoon black pepper
07 - 1/2 teaspoon garlic powder

08 - 1/2 cup fresh parsley, finely chopped
09 - 1 medium red onion, finely chopped
10 - 1/4 cup feta cheese, crumbled
11 - tzatziki, aioli, or lemon wedges (optional)

# Instructions:

01 - Preheat the oven to 425 degrees Fahrenheit.
02 - Wash the potatoes, leaving the skins on, and cut them into 1/3-inch wide sticks. Ensure each fry is the same length as the potato.
03 - Place the fries in a large bowl filled with cold water and soak them for 10 to 15 minutes. Drain and dry them thoroughly.
04 - Add the fries into a large mixing bowl and toss them with olive oil, salt, dried oregano, dried dill, black pepper, and garlic powder.
05 - Line a baking sheet with parchment paper. Spread the potatoes out into an even layer.
06 - Bake the fries for 15 minutes. Remove them from the oven, carefully flip, and return to bake for an additional 6 to 8 minutes, or until crisp and golden brown.
07 - Transfer the baked fries to a serving plate. Sprinkle with finely chopped parsley, red onion, and crumbled feta cheese.
08 - Serve with tzatziki, aioli, and/or lemon wedges. Greek fries are best served warm.

# Notes:

01 - Soaking the potatoes in water removes excess starch, helping them crisp better during baking.
