Italian Pasta Salad Twist (Print Version)

# Ingredients:

01 - 8 oz rotini pasta
02 - 6 oz turkey salami, sliced into strips
03 - 10 oz cherry tomatoes, halved
04 - 1/2 English cucumber, diced
05 - 1/2 medium red onion, finely diced
06 - 8 oz fresh mozzarella, pearls or halved mozzarella balls
07 - 1/2 cup black olives, pitted and sliced
08 - 1/2 cup kalamata olives, pitted and halved
09 - 1/2 cup roasted red peppers, drained and coarsely chopped
10 - 1/3 cup parsley, finely chopped
11 - 1 cup Italian dressing, or added to taste

# Instructions:

01 - Cook rotini pasta according to package instructions in salted water just until pasta is al dente (firm to the bite).
02 - While pasta cooks, prep the remaining ingredients including turkey salami, cherry tomatoes, cucumber, onion, mozzarella, olives, roasted red peppers, and parsley.
03 - Combine the cooked pasta with all prepared ingredients in a large bowl and mix well.
04 - Add Italian dressing to the portion of salad you plan to eat. Serve right away or cover and let the salad marinate for 1 to 3 hours before serving.

01 - For best results, allow the salad to marinate for at least 1 hour to enhance the flavors.
