Quinoa Chocolate Drops (Print Version)

# Ingredients:

01 - 1/3 cup quinoa, pre-rinsed
02 - 2/3 cup water
03 - 16 whole dates, pitted, no sugar added
04 - 1/2 cup raw almonds, with skin
05 - 1/3 cup natural crunchy peanut butter (optional: almond butter or SunButter)
06 - 1/3 cup dark chocolate chips

# Instructions:

01 - Combine quinoa and water in a small saucepan, cover and bring to a boil. Reduce heat to a simmer and cook for 12-15 minutes, or until all water is absorbed. The quinoa should remain warm for subsequent steps.
02 - Place dates in a food processor or high-powered blender and pulse until they form a cohesive ball. Transfer to a medium mixing bowl.
03 - Add almonds to the food processor and pulse until finely minced, ensuring not to over-process into almond meal.
04 - Add the date ball, minced almonds, peanut butter, and warm quinoa to the food processor. Pulse until the mixture is well combined.
05 - Add the chocolate chips and pulse until they are evenly distributed and melted into the mixture.
06 - Transfer the mixture back to the mixing bowl. Shape it into 24 one-inch drops or balls. Roll in crushed almonds if desired. Place on a dish and refrigerate until set.
