Heat a large skillet over medium heat. Crumble the breakfast sausage into the skillet and cook, stirring occasionally, until browned and fully cooked through, about 5-7 minutes. Transfer the cooked sausage to a paper towel-lined plate to drain excess grease.

In the same skillet, melt the butter over medium-low heat. Crack the eggs into a bowl, add milk, salt, and black pepper. Whisk until fully combined and smooth.

Pour the egg mixture into the skillet with the melted butter. Let the eggs cook undisturbed until the edges begin to set. Stir gently with a spatula, moving from the outside toward the center, and continue cooking until eggs are cooked through but still soft and creamy.

Remove the skillet from heat and stir in the cooked sausage and shredded cheddar cheese.

Place the flour tortillas on a flat surface. Spoon the egg, sausage, and cheese mixture evenly onto the center of each tortilla. Fold in the sides, then roll up tightly from bottom to top.

If desired, heat a nonstick skillet over medium heat and place the roll-ups seam side down to lightly toast and crisp the tortillas.
