In a separate bowl, combine the egg yolk with the plain flour, baking powder, and caster sugar. Gradually pour in the milk, whisking to achieve a smooth consistency. Gently fold in the beaten egg whites.

Heat oil in a non-stick pan over medium heat. Pour in 1/4 of the batter, cooking for 2-3 minutes on each side until golden. Repeat to make a total of four pancakes, keeping them warm in an oven.

Increase the heat and add more oil to the pan. Divide the beef mince into two equal portions. Press one portion flat in the pan and cook for 2-3 minutes until crispy. Flip the patty, add cheese on top, and cook for another 1-2 minutes.

Place a pancake as the base, top with a cheesy beef patty, drizzle with burger sauce, layer sliced gherkins, and finish with another pancake. Repeat for the second burger.
