Place the beef chunks into the slow cooker and pour the pineapple juice mixture over the beef.

In a small bowl, mix the cornstarch and water to form a slurry.

Remove the beef and pineapple from the slow cooker and set aside. Pour the remaining liquid from the slow cooker into a saucepan. Add the cornstarch slurry to the saucepan and bring to a boil, stirring until thickened.

Return the beef and pineapple to the slow cooker and pour the thickened sauce over. Garnish with chopped green onions before serving.
