Slow Cooker Pineapple Beef (Print Version)

# Ingredients:

01 - 2 pounds beef shoulder, cut into chunks
02 - 1 can (20 ounces) pineapple chunks, drained and juice reserved
03 - 1/4 cup soy sauce
04 - 1/4 cup brown sugar
05 - 3 cloves garlic, minced
06 - 1 teaspoon ginger, minced
07 - 1 tablespoon cornstarch
08 - 1 tablespoon water
09 - Salt and pepper to taste
10 - Chopped green onions for garnish

# Instructions:

01 - In a bowl, mix the pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
02 - Place the beef chunks into the slow cooker and pour the pineapple juice mixture over the beef.
03 - Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
04 - Add the pineapple chunks to the slow cooker during the last hour of cooking.
05 - In a small bowl, mix the cornstarch and water to form a slurry.
06 - Remove the beef and pineapple from the slow cooker and set aside. Pour the remaining liquid from the slow cooker into a saucepan. Add the cornstarch slurry to the saucepan and bring to a boil, stirring until thickened.
07 - Return the beef and pineapple to the slow cooker and pour the thickened sauce over. Garnish with chopped green onions before serving.
